: Description:

Spielberger Organic Rye Dark Bread Flour. Aromatic flour blend for traditional dark bread with a moist crumb and flavourful crust. The Rye Dark Bread Flour combines wheat Type 1050 with valuable rye wholegrain meal for a hearty, moist crumb. The high wholegrain content improves water absorption and ensures long-lasting freshness. Whether classic with sourdough or malty-sweet with beet syrup, the flour delivers a savoury aroma and good baking properties.
Basic recipe: Rye brown bread
Ingredients: 20 cm loaf tin, 500 g rye brown bread flour, 1 bag dry rye sourdough, 8 g fresh yeast, 10 g salt, 500 ml lukewarm water

Preparation:
  1. Dissolve the dry sourdough in 400 ml lukewarm water. Mix the flour and salt in a bowl. Add the lukewarm water and knead for 6 minutes. 
  2. Cover the dough and leave to rise overnight (approx. 12 hours) at room temperature (20-22°C). 
  3. Dissolve the yeast in 100 ml lukewarm water and add to the dough. Mix well for several minutes. Cover and leave to rise until doubled in volume (2 - 4 hours). 
  4. Grease a loaf tin well. Work the dough into a long, round shape on a lightly floured board and place in the tin. Cover with a cloth and leave to rise for 1 hour. 
  5. Preheat the oven to 240 °C and place the bread on the second lowest shelf. After 10 minutes, switch down to 210 °C and bake for 50 minutes. Turn the bread out of the tin and bake upside down for a further 10 minutes until it sounds very hollow when tapped.
  6. Remove the finished bread from the oven and leave to cool under a cloth on a wire rack.
