My.Yo Organic Yoghurt Fermentation Lacto Pro + Inulin. There's real power in here. Lacto Pro® is what My.Yo calls the good lactic acid bacteria that reach the intestine alive. With this ferment, an extra kick has been added: Inulin, a vegetable dietary fibre that is available to the bacteria as food to keep them active for an extra long time. A highly active yoghurt ferment that makes deliciously fresh yoghurt as if by magic. For up to 15 litres of yoghurt.
The ferment is suitable for the following varieties of milk:
  • All sorts of UHT milk, optimal for 3.5% fat
  • Fresh milk (must be cooked before)
  • lactose-free milk
  • high quality Soy drinks
Preparation in the My.Yo Yogurt Maker
  1. Stir a bag of My.Yo Yogurtferment into one litre of milk (room temperature) in the white inner container.
  2. Put the lid on the inner container 
  3. Pour 750 ml boiling water into the My.Yo Yogurt Maker and place the inner container in the water.
  4. Simply screw the lid on and wait. After 24 hours, the yogurt is ready to enjoy. Then place the yogurt in the fridge.

Application:

Mix 1 liter of milk with the Yogurt-Ferment and leave to ripen in the My.Yo Yogurt Maker (or in any conventional electric yogurt maker) for 12-14 hours at 37-42 °C.

Shelf life/inoculation:
After incubating for 12-14 h, the yogurt can be kept in the fridge for around ten days. If you want to make another batch of yogurt, this should be done within the first three days. To do so, simply take around 150 ml of the first batch and stir it into one litre of milk. Please make sure that all your containers are spotlessly clean in order to prevent the incubation of unwanted bacteria.

Tips for a firmer consistency:
The finished yoghurt is smooth and creamy. For a naturally frim consistency, the yogurt should be refrigerated for about 8 hours after the inoculation process. If you prefer a more set yogurt, try the following tips:
Add three or four tablespoons of powdered milk to the milk when making the yogurt.
Only use about 900ml milk instead of one litre.
The higher fat content of the milk, the creamier and thicker the yogurt, so it is best to use full-fat milk.

Tips, in case your yogurt does not turn out quite right:
If the yogurt has not set, simply maintain the approach and repeat steps 3 and 4 in the instructions.
Mix the yogurt starter and milk well. It’s best to try mixing the yogurt with a little milk first and then with the rest of the milk.
Always fill the container with boiling water.
Leave to inoculate for 12-14 hours.
Keep the yogurt maker as still as possible while the yogurt is being made.
The milk should not be cold but should be brought to room temperature at least. In the wintertime, it’s best to heat the milk slighty (although not hotter than 40°C).
If the yogurt has a slimy consistency, ESL (extended shelf life) milk has probably been used. In this case, you will need to boil the milk frist and then cool it down to max. 40°C before the starter can be mixed in.
