: Review date:I find asafoetida (also called hing or "devil's dirt") wonderful! Since I don't want to eat onions and/or garlic so often, but it makes the food more aromatic, I have found a good alternative with asafoetida. It also makes pulses etc. more digestible. I used to buy conventional quality asafoetida in Asian shops, but now I'm happy to be able to order an organic version from Violey!
Ich finde Asafoetida (auch Hing oder "Teufelsdreck" genannt) wunderbar! Da ich nicht so oft Zwiebeln und/oder Knoblauch essen möchte, dieser aber die Speisen aromatischer macht, habe ich mit Asafoetida eine gute Alternative gefunden. Außerdem werden Hülsenfrüchte etc. bekömmlicher. Früher habe ich Asafoetida in konventioneller Qualität im Asialaden gekauft, bin nun aber froh bei Violey eine Biovariante bestellen zu können!

Wer mit Asafoetida kochen will, sollte sich damit auskennen. Schnell hat man zuviel genommen und dann hat man den Salat. Es handelt sich hier zwar nicht um reines Asafoetida, es ist noch Bockshornklee dazugemischt. Aber die Wirkung ist trotzdem sehr intensiv. Bei einer gewissen Routine, gelingen spannende und vielfältige Kreationen. Wir mögen es auf jeden Fall.

: Review date:For years, despite curiosity, I gave it a wide berth because of concerns about dosage (intensity) and intolerances. Then at some point I "courageously" ordered it - since then I can't imagine my colourful freestyle cooking without it. Garlic, previously beloved, now leads a shadowy existence ;-) Instead, I now use a (sometimes larger) pinch of asafoetida far more often - the absolute, discreetly reminiscent of garlic, but spicier icing on the cake, whether Asian or "German-juicy".
I love it mixed with cream cheese, a red onion and colourful vegetables, plus colourful pepper and a pinch each of dark sauce and yeast-free vegetable stock from Erntesegen. Or with mango chutney, yellow curry paste, ginger, peanut butter - and of course colourful vegetable mix ;-) Mhjam! :-)
Jahrelang trotz Neugier einen großen Bogen drum gemacht aus Bedenken über Dosierung (Intensität) und Unverträglichkeiten. Irgendwann dann doch "mutig" mitbestellt - seitdem nicht mehr wegzudenken bei meiner bunten Freestyle-Kocherei. Knoblauch, zuvor heißtgeliebt, fristet nun ein Schattendasein. ;-) Stattdessen gibt's nun weit häufiger eine (auch mal größere) Prise Asafoetida - das absolute dezent an Knoblauch erinnernde, aber würzigere I-Tüpfelchen, ob asiatisch oder "deutsch-deftig".
Ich liebe es ich z.B. im Mix mit Frischkäse, einer roten Zwiebel und buntem Gemüse, dazu bunten Pfeffer und je eine Prise dunkle Sauce und hefefreie Gemüsebrühe von Erntesegen. Oder auch mit Mango Chutney, gelber Currypaste, Ingwer, Erdnussbutter - und natürlich buntem Gemüsemix. ;-) Mhjam! :-)

Man sollte wissen, was einen erwartet, wenn man Asafoetida benutzt. Der Geruch ist schon sehr aussergewöhnlich. Doch gehört es nun mal in die ayuvedische Küche. Habe mich ein bisschen belesen und erfahren, dass dieses Gewürz bereits von den alten Römern verwendet wurde. Toll, dass es immer noch existiert. Es ist sehr aromatisch (übrigens ein prima Ersatz für Menschen, die eine Knoblauch-Unverträglichkeit haben, aber nicht darauf verzichten wollen) und passt sehr gut zur ayurvedischen Küche.
