But if you consciously avoid animal products, you don't have to say goodbye to fruit cakes. There are alternatives. Agar and pectin, for example.

Agar is the oldest known plant-based gelling agent. The Japanese have been using it since the 17th century. Agar is obtained from dried seaweed. That's why it is also known under the terms ”Japanese gelatin“ or ”fish glue“. The alternative to gelatin is neutral in taste and can be used for sweet and savoury dishes. The gelling power is even significantly stronger than that of animal gelatine. Another option is pectin. Pectin is usually obtained from sugar beet, apple peel, orange peel or lemon peel. Pectins have the ability to form a gel. Therefore, pectin is often used as a gelling agent and thickener in sauces, cake glazes, desserts, gelling sugars, jams and sweets of all kinds.
