The addition of enzyme-active malt gives bread rolls, baguettes or loaves the typical malty flavour and ensures a crispy crust, which keeps baked goods fresh and moist for longer. The crumb also benefits from the addition of baking malt and turns out exceptionally fluffy.

Application:

The manufacturer recommends the use of BioGourmet baking malt for wheat doughs in particular. It increases the leavening power of the yeast. This allows the proportion of yeast to be reduced. Due to the increased enzyme activity, numerous aromatic substances are produced that interact during the baking process and give the baked goods more flavour and a more complex aroma.
Dosage: 10 g BioGourmet baking malt per 500 g wheat flour. When using a starter or sourdough, the quantity is reduced to 5 g.
