: Description:

BioVegan Organic Bread Mix Crusty Bread,. For this organic bread mix, various flours such as wholemeal oat flour, wholemeal rice flour or wholemeal buckwheat flour are processed. Coriander, fennel, aniseed and caraway give the recipe a special touch.
For the crusty bread you still need:
450 ml water, 3 tbsp (30 ml) vinegar (for example apple cider vinegar), hand mixer with dough hook, dough scraper.
Note: adding vinegar only helps to preserve the bread, so it stays fresh for a longer time. The smell and taste of vinegar will disappear during baking.

Preparation: 
  1. Preheat the oven to 250 °C convection or top/bottom heat and place an ovenproof dish filled with water in the oven. Add the bread mix, water and vinegar in a mixing bowl and mix briefly with a hand mixer and dough hook until a smooth dough is formed (max. 1 to 2 minutes). Do not knead the dough for too long!
  2. Now gently mix the dough together in the bowl with a dough scraper and leave it in the bowl for 15 minutes until the oven is well preheated.
  3. Now, without kneading the dough, carefully remove it from the bowl (use the dough scraper if necessary) and place onto a baking tray with baking paper. Do not knead the dough any more or it will not be airy! The rough surface gives a rustic crusty bread look after baking. Tip: cut the bread 2-3 cm deep (for example in a cross shape).
  4. Dust the crusty bread with plenty of flour and bake it in a preheated oven at 250 °C convection oven for 10 minutes and then for 45 minutes at 220 °C or at 250 °C top/bottom heat for 55 minutes.
  5. Enjoy the finished crusty bread after it has cooled on a rack.

The crusty bread turned out really great. Nice and crispy on the outside and fluffy on the inside. The gluten-free bread from the bakery costs me less (with electricity), but the homemade bread now tastes better than the bread from the bakery. I used my proofing basket for the bread. This way you can almost not tell if it's from the bakery or not. I froze the other half of the bread fresh. That way it still tastes good when I defrost it again.

Das Krustenbrot ist richtig klasse geworden. Außen schön knusprig und innen fluffig. Das glutenfreie Brot vom Bäcker kostet mich zwar umgerechnet (mit Strom) weniger, dafür schmeckt mir das selbstgemachte Brot mittlerweile besser als das vom Bäcker. Für das Brot habe ich meinen Gärkorb verwendet. Dadurch erkennt man fast keinen Unterschied, ob es vom Bäcker ist oder nicht. Die andere Brothälfte habe ich frisch eingefroren. So schmeckt es auch noch, wenn ich es wieder auftauen lasse.
