BioGourmet Organic Heather Honey. BioGourmet heather honey is a local honey speciality that the bees collect from the nectar of the flowering heather in late summer. The harvesting period in the German heathlands is often only a few weeks, making this honey a real rarity.
Its special composition and very fine pollen content give heather honey an unusual, jelly-like consistency and therefore a very unique mouthfeel. To extract the honey, the beekeeper is therefore dependent on a special tool, the so-called stippling device. Only with this additional work step is this treasure ready for harvesting and can be gently extracted from the combs or made flowable.
The flavour of heather honey is intense, tart and spicy, slightly malty and exudes the scent of blooming heather. Its colour ranges from amber to reddish brown and reflects its origin and special character.
Heather honey is usually enjoyed pure and unadulterated on fresh bread or rolls, but also goes well with strong cheeses such as mountain cheese or goat's cheese. Its intense flavour enhances yoghurt and muesli and enriches dressings and marinades with mustard or herbs in a particularly spicy way.
