BioGourmet Organic Bündner Barley Soup. Barley-based soups are part of the traditional cuisine in many mountain regions, as barley is a frugal and robust grain that can still be grown at high altitudes. In Graubünden, the Emmental and the Jura, it used to be the predominant grain - barley is also considered by the people to be generally warming and invigorating. In the canton of Graubünden, where almost every valley speaks its own dialect, it is not surprising that there are many recipes for "Schoppa da giuotta".
What all recipes have in common is their rustic character, which is sometimes emphasised with smoked bacon. Sometimes, however, a more refined flavour is created with Bündner meat or cream. The BioGourmet Bündner Barley Soup takes on this traditional savoury taste with the spice of blue fenugreek and a pinch of smoked salt, but leaves enough room for your own refinements.

Cooking instructions:
Place 2 tbsp butter in a saucepan, add the packet contents. While the pan is heating up, briefly stir the dish with the butter until it becomes slightly fragrant. Then pour over 1 litre of water, bring to the boil, cover and cook for 25-30 minutes, stirring occasionally.
