BioGourmet Leonardi Organic Aceto Balsamico di Modena IGP. This fine balsamic vinegar is produced in a closed cycle on the Acetaia Leonardi estate, where all stages from harvesting to bottling take place on site. The special climatic conditions in Modena – hot summers and cold winters – create a wonderful balance between sweetness and acidity, supported by slow maturation in wooden barrels made from various types of wood such as oak, chestnut and cherry.
This full-bodied, velvety balsamic vinegar adds a delicious touch to numerous dishes:
- Vegetables: Enhances grilled or steamed vegetables such as asparagus, radicchio or courgette with a delicate, mild acidity.
- Fish and seafood: An exquisite addition to fried salmon, tuna tartare or scallops, whose delicate flavours are enhanced by the balsamic vinegar.
- Pizza and risotto: Adds a special touch to pizza variations with buffalo mozzarella, rocket or Parma ham, as well as creamy risotto, for example with porcini mushrooms.
- Cheese: Perfect with mature cheeses such as Parmigiano Reggiano, Gorgonzola or Burrata, bringing out their delicate flavours.
- Desserts: Harmonises beautifully with strawberries, figs or classic vanilla ice cream and adds an unusual touch to fruit salads.
