Zwergenwiese Organic Mustard
When it comes to sausages, mustard should always be nearby. How imperfect would a wonderfully fragrant, glossy, nicely browned, wonderful grilled sausage be between two fresh buns without a fine spice? Since mustard can also be used to create delicious salad dressings, the yellow seasoning is also very popular with vegetarians. However, there is not just “the one mustard“. The most popular version in Germany is medium hot mustard, which is also called Delikatess mustard. In the eastern states and in parts of Austria, it is sometimes refined with horseradish while in southern Germany sweet mustard comes along with wheat beer and veal sausages. In the North and West people prefer extra spicy mustard, though. One reason for this might be the neighbors, since in England and France hot mustard has a long tradition.
When asked for mustard, it is usually not the plant that is meant, but the yellow spice paste. The most important ingredient for its production is, of course, the grains of white and black (or rather brown) mustard. Their mixing proportions later determines the spiciness of the mustard paste. Black mustard is hotter and more intensive than white mustard, but its hotness lasts longer. However, from a botanical point of view, black mustard is not a mustard, but a cabbage from the genus Brassica in the cabbage family. Nevertheless, it is essential for the production of table mustard. In order to release the spiciness of the grains, first of all, they must be ground and then mixed with liquid. The actual hot ingredients are the essential oils in the grains of the mustard seeds, which are only dissolved with liquid.
The typical ingredients of table mustard next to ground mustard seeds include vinegar or grape must, water, salt and spices. Not only the essential oil, but also vinegar and salt have a preserving effect and give the mustard a long shelf life. In the US turmeric is also added to the mustard so that it adds a yellow color to burgers and hot dogs. By contrast, Central German mustard looks brighter and more natural. New variations are created constantly for more sophisticated flavors. While apricot and plum mustard focus on the fruity note, gourmets prefer their mustard with special characters of Merlot, Prosecco and whiskey.
