Among the gluten-free baking mixtures without oats, it is the very best tasting mixture. However, after the bread has risen for the first time, I only let it rest on the baking tray for a very short time until the oven is hot. This way the bread doesn't spread so much and it rises really well in the oven. It looks like a perfect bread from the bakery with a nice crumb. I bake with top/bottom heat and with conventional dry yeast so that it rises reliably and doesn't have such a "yeasty" taste. For a heartier taste, I add bread spice or sometimes caraway seeds separately. It tastes like a very, very light white bread. Because of the consistency, thicker slices are recommended as it is somewhat unstable.

Unter den glutenfreien Backmischungen ohne Hafer ist es geschmacklich die allerbeste Mischung. Ich lasse das Brot allerdings nach dem ersten aufgehen nur noch ganz kurz, bis der Ofen heiß ist, auf dem Backblech ruhen. Dadurch geht das Brot nicht so in die Breite und es geht dann im Ofen richtig toll auf. Es sieht aus wie ein perfektes Brot vom Bäcker mit schöner Krume. Ich backe mit Ober/Unterhitze und mit konventioneller Trockenhefe damit es zuverlässig aufgeht und kein so "hefiger" Geschmack entsteht. Für den herzhafteren Geschmack füge ich noch Brotgewürz oder mal einzeln Kümmel hinzu. Es schmeckt wie ein sehr, sehr helles Weissbrot. Wegen der Konsistenz empfehlen sich dickere Scheiben da es etwas instabil ist.
