From 1663 to 1806 the “Perpetual Diet of Regensburg“ took place in Regensburg, which was a kind of political congress with representatives of 350 German individual states and principalities. In the town hall of Regensburg the representatives of all imperial classes met. These included, among others, electors, archbishops, count palatines, delegates of free imperial cities, as well as the grand masters of the orders of the knights. Louis XIV., the King of France, sent Duke de Choiseul du Plessis-Praslin as a delegate. For the dry and lengthy congress work the participants needed a lot of patience and especially the ability to sit still. To keep them in a good mood, their day was sweetened by „Imperial Confectionary“. In general, these were over-sugared nuts and almonds. According to the legend, a small accident occurred in the congress kitchen. The chef Clémont Jaluzot accidently threw some sugar nuts in a pot with melted chocolate. The clever cook immediately recognized the potential of his accidental discovery and sold the result as a new creation. The new candy was given the name „praline“ in honor of the French representative Plessis-Praslin.
In Belgium the invention of the praline is attributed to Jean Neuhaus. The inhabitant of Brussels with Swiss roots had his own chocolate factory. In 1912 he is said to have formed small balls from nuts and almonds, which were then covered with chocolate. Why he called the balls “pralines”, however, is not known. The question of the praline's origin will never be cleared up. However, what makes them different from confectionary is easy to answer. At first, a praline must be bite-sized. That means, you should be able to eat it with a bite. In addition, it must consist of at least 25% of couverture (chocolate coating). If this is not the case one speaks of confectionary. Often, the two of them are mixed up, because they are often offered together. While the praline always must contain chocolate, confectionary sometimes can do completely without it. In Europe this is a rather new trend. In the Orient it is completely normal though. The popular Indian Laddu, for example, consists exclusively of chickpeas and sweet fruits. And unlike pralines you can make delicious confectionary even in raw food quality.
