Just Taste Organic Udon Noodles. Udon is the thickest of the Japanese noodle varieties and is regarded in Asian cuisine as the most traditional Japanese noodle shape, which is mainly used for frying. Enjoy udon in soups, bowls or with vegetable dishes.

Recipe suggestion: Udon noodles with lots of vegetables

Ingredients for 2 portions:

300 g Udon noodles (2 packs)
100 g carrot
100 g mushrooms
100 g courgette or broccoli
3 spring onions
2 cloves garlic
1 chilli pepper
2 tbsp soy sauce
1 tbsp rice vinegar
1/2 tsp raw cane sugar
3 tbsp sesame oil
1 tbsp roasted sesame seeds

Preparation:

Cut the carrots, mushrooms and courgettes into bite-sized pieces. Cut the white part of the spring onion into pieces about 2 cm long, the green part into fine rings, finely chop the garlic and chilli.
For the sauce, mix 1 tbsp sesame oil, soy sauce, rice vinegar and sugar and set aside.Pour the remaining oil into a hot wok/pan, stir-fry the white part of the spring onion over a high heat for 1 minute. Add the remaining vegetables and fry for 2-3 minutes, stirring frequently.
Add the udon noodles, stir-fry briefly, then deglaze with approx. 100 ml water and simmer, stirring, until the noodle nests have dissolved and the liquid has almost evaporated.
Add the sauce and reduce for 2 minutes, stirring constantly.
Serve sprinkled with spring onion greens and sesame seeds.
