Flour made from ground sweet lupine

: Description:

Govinda Organic Sweet Lupin Flour. With a high degree of plant proteins, they are an excellent source of protein. In order to stabilise the coarsely ground wholemeal, it must be treated for about 4 seconds at 70°C with hot water steam.
Sweet lupine and chestnut bread
100 g sweet lupine flour
180 g cornstarch
200 g chestnut flour
1 cube of yeast
2 tsp. sugar
1 1/2 tsp. salt
2 tbsp. rapeseed oil
250 ml lukewarm water
50 g chia seeds
grains if desired

Mix together the various flour, cornstarch and salt in a bowl. Make a small well in the flour and add the yeast, sugar, oil, 3 tbsp. water and salt. Mix a little and leave for 15 minutes.
In the meantime add half of the water and the chia seeds to a bowl. It will form a gel.
Form the chia-gel into a dough and knead. You may need to add more water. Leave for 45 minutes and knead well once more. Leave for another 60 minutes.
Bake at 170 °C (top/bottom heat) for 15 minutes. Then finish off by baking at 200 °C for approx. 30-35 minutes.

Tastes slightly bitter. I prefer soy flour (for sweet and savoury) and chickpea flour (for savoury).
