It is called chai. It is Hindi and simply means ”tea“. In wide sections of Asia this is the common term for the popular hot beverage. In southern China it is referred to as ”té“. When European sailors started to import large quantities of the coveted leaves té became tea. Thus the expression chai tea is redundant. What we know and appreciate as chai, is called ”masala chai“ in the Mid East and means nothing else than tea blend. There is not a traditional recipe per se. The ingredients vary depending on tradition and region. In India, where chai can be called a national drink with a clear conscience, every family has a very own recipe. Most Indians drink chai at least twice a day: for breakfast and in the afternoon - just like in England.

The base for masala chai is black tea. It is combines with different spices such as cinnamon, ginger, cardamom, Indian bay leaves, nutmeg, pepper or cloves. Chai traditionally is served with a shot of milk and is additionally sweetened with honey or sugar. Of course chai tastes best when you create your own recipe. Preparing a chai properly is a ritual which takes some time and leisure. Unfortunately there sometimes is a lack of those things in everyday life.
