Borchers Kichererbsenmehl. Aromatic organic chickpea flour made from unroasted chickpeas. When cooking and baking, chickpea flour enriches a variety of dishes in a delicious way. It has a firm place in oriental cuisine and is also ideal for thickening soups or sauces.
Chickpea flour is a valuable ingredient for the preparation of pancakes, pizza dough, patties and as a supplement in bread or cake dough.

Ingredients (2 people):

120 g organic chickpea flour
1 tbsp parsley, freshly chopped
1/2 tsp cumin
1 shallot, chopped
200 ml water, boiling
1/2 tsp lemon juice
1 tsp salt
1 tsp olive oil
some oil for frying.

Preparation:

Mix all dry ingredients thoroughly. Pour in the boiling water and stir vigorously at the same time. Leave to swell for about 10 minutes, the dough should thicken quickly. Now mix in the olive oil and lemon juice. Form flat patties with wet hands. Heat a pan with a little oil on medium-high and fry the falafel, covered, one after the other until golden brown.
