Allos Organic Amaranth Corn Waffles

:

When the first Europeans, lead by Hernando Cortez, landed on the coast of Central America in 1518, they found a wonderful colour range of naturally grown plants and cultivations of Aztec farmers. The evergreen vegetation was interspersed with purple fields as far as the eye could see. But the red fruit stands of the amaranth were not only colourful dots in the landscape, they were also the main staple food of the Aztecs in addition to beans and corn. We know why today. The inconspicuous grains contain loads of minerals, protein, trace elements and easy to digest dietary fibres. The translation of amaranth is ”immortal“. The natives believed that the grains had a live-extending and healing impact. According to the legend, a holy bird brought the grain to the Indians for enhancing body’s strength. Therefore, amaranth was not only worshipped by the Aztecs as a holy grain, but also by the Incas. After the Spanish invasion no one could still talk about immortality. The opposite was the case. In the effort to rule out all pagan customs and culture, the cultivation of amaranth was forbidden and charged with death penalty by the Conquistadores. Already existing cultivations were destroyed. The little grain was no longer allowed to be sowed and was more and more forgotten. But still it could survive. Today, amaranth is grown not only in Mexico, but also in many parts of America, Asia and Western Africa.

Those who are interested in nutrition certainly know the small amaranth grains with their incredible amount of easily accessible nutrients and vital substances. But not only the amaranth grains provide the base for tasty recipes, the leaves can be prepared in delicious spinach-like dishes as well. Amaranth is one of the oldest cultivated plants in the world. Since amaranth is not growing at temperatures below 8 degrees Celsius and needs steady sunny hours, it is no wonder that it is grown mainly in the moderate climate zones of Latin America. In many fields of the highland regions of Peru and Mexico, however, a grain that is considered to be typically European is growing as well: corn. Corn plants were first brought to Spain in the 16th century by Columbus. The centre of the primal corn was in Central Mexico, just like the one of amaranth. Corn was one of the central crops of the Aztecs.
