Cut 800 g peeled potatoes into pieces and boil in salted water until soft, drain and immediately press through a potato press. Knead into a smooth dough with 60 g melted butter, 1 egg, 150 g potato flour and 1 teaspoon salt. Shape the dough into dumplings with damp hands. Bring a large pot of salted water to the boil. Roll the dumplings briefly in potato flour and place in the boiling water. Let simmer at moderate heat for about 20 minutes. Caution! The water must not boil bubbly! The dumplings will float to the surface when they are done. Then lift them out of the water with a slotted spoon.

Potato flour for thickening: Mix potato flour in cold liquid and then stir into the boiling liquid. Bring to the boil briefly. To thicken sauces and soups, approx. 4 level tablespoons (40 g) of starch are needed per litre of liquid.
