Could you imagine to go on a long vacation in your garden? Many Swedes do that every year. Not in the one behind their house or an allotment garden but in the “skerry garden". A skerry is a small rocky island. On the east coast of Sweden there are more than 24,000 of them: the Stockholm archipelago. Here, within sight of each other one island comes after another. Some are so small that one can just barely land by boat. Others are big enough for small groves. Many families have built themselves a small red wooden house on a skerry. Thither the residents of the capital withdraw, when they need to have a rest. Some families spend their entire summer holidays there. Summer on the Stockholm archipelago is absolutely extraordinary. Primarily because the days are longer and brighter. The winter days in Scandinavia are indeed rather short, but in exchange the sun shines even longer during summertime. After dinner, you still have enough light to explore the surrounding islands by rowboat. From the jetty you can hang your feet into the water while reading a book - without a lamp. The soft light of the Swedish dusk creates a calm, fairytale like atmosphere. And all of a sudden one can understand why elves and trolls inhabit the forests in Nordic fairy tales. After a short night, the rays of the morning sun are already shining through the window again. Those who wake up now can start the day with by dipping into the sparkling waters of the Baltic Sea.

Although most of the houses in the archipelago now have electric light, they are still kept deliberately simple. Here the focus is on the essentials. The meals are principally eaten outside, except when it rains. Above all, fish, potatoes and crisp bread is served. Especially the crispbread is an absolute must-have. In Sweden, it is believed that a household without crispbread is not complete. Simply known as "knäcke", this bread is to be found on nearly every dining table. Adults as well, like the loud cracking sound while chewing it. Unlike in southern Europe, the crusty bread is not just a garnish, but in the centre of the meal. For a simply traditional Swedish meal knäcke, butter and cheese are sufficient. However one can combine knäcke with everything the heart desires. Therefore, it is indispensable, especially in the small pantries of the archipelago houses.
