Spielberger Organic Spelt Flour Type 1050. In the Spielberger mill, the grain is milled in several steps to produce this fine, medium-light flour. This flour is particularly suitable for breads, rolls, cakes and pancakes.
Basic recipe: Spelt and rye bread
Ingredients: 600 g Organic Spelt Flour Type 1050, 400 g Organic Rye Flour Type 1150, 20 g salt, 20 g yeast, 650 ml lukewarm water, 75 g sourdough fresh or 15 g dry one.
Preparation: Mix both types of flour with salt. Mix the yeast in a little lukewarm water, add to the flour with the lukewarm sourdough and the remaining water. Knead into a smooth dough and leave covered in a warm place to rise for approx. 30 minutes. Knead the dough again and add some flour if necessary. Form two long loaves and leave to rise on the baking tray for another 15-20 min. Bake in the oven preheated to 230°C for 10 min, then turn the temperature down to 200°C and bake for another 40-45 min.

In the past, we only used wheat flour. We knew nothing else. Other types of grain were foreign to us. It was through a friend that I first learned that spelt flour was available. She let me try it. Since then, we only eat spelt flour. After trying several types of grain, I came across Spielberger flour. It tastes much better than most other products and gives a strong flavour to the food as well as to my bread. It is also a pleasure to bite into fresh biscuits, which also taste very deliciously of spelt. I will no longer buy wheat flour and will stick to the very good spelt flour.

Früher verwendeten wir nur Weizenmehl. Wir kannten nichts anders. Andere Getreidesorten waren uns fremd. Durch eine Freundin erfuhr ich erst, dass es Dinkelmehl gibt. Sie ließ es mich probieren. Seitdem essen wir nur noch Dinkelmehl. Nachdem ich mehrere Getreidesorten durchprobiert habe, kam ich auf das Spielberger Mehl. Es schmeckt deutlich besser als die meisten anderen Produkte und gibt den Speisen sowie meinem Brot einen kräftigen Geschmack. Zudem ist es ein Genuss, wenn man in frische Plätzchen reinbeißt, die zudem noch sehr lecker nach Dinkel schmecken. Ich werde kein Weizenmehl mehr kaufen und bleibe bei dem sehr guten Dinkelmehl.

Spelt flour type 1050 from Spielberger is the best for my taste. I actually use it for everything. I no longer use wheat flour at all. It gives all doughs an airy consistency and tastes delicious at the same time. It's just as good for thickening sauces. A little tip: pizza dough with spelt is especially delicious!

Das Dinkelmehl Type 1050 von Spielberger ist für meinen Geschmack das Beste. Ich verwende es eigentlich für alles. Weizenmehl kommt mir garnicht mehr ins Haus. Es verleiht allen Teigen eine luftige Konsistenz und schmeckt dabei noch sehr lecker. Zum Soßenbinden eignet es sich ebenso gut. Kleiner Tipp: Besonders lecker schmeckt Pizzateig mit Dinkel!
