Biovita Organic Rye Sourdough Extract. With wholemeal flour for strong rye and mixed rye breads. The sourdough extract naturally leavens the bread and enhances its flavour.
Rye Mixed Bread
  • 375 rye flour / 375 g wheat flour
  • 560 ml of warm water
  • 1 bag Biovita rye sourdough extract
  • 20 g dry yeast
  • 10 g salt / 5 g sugar
Dissolve the Biovita sourdough and yeast with a little sugar in the warm water. Add the rye and wheat flour and knead thoroughly. Finally knead in the salt and leave to rise in a warm place for about 1 hour until it has approximately doubled. Bring into the desired shape on the floured baking pan  (no kneading anymore!) and let rise for another hour. Preheat the oven to 250 ° C, bake the bread for 10 minutes, then reduce to 200 ° C and let bake another 50 min. Cut open only after the bread has cooled completely.

Baking time: about 60 minutes
Top / Bottom heat: bake 10 min at 250 ° C, then 50 min at 200 ° C
Convection: Bake 10 minutes at 230 ° C, then 50 min at 180 ° C

The sourdough extract is great. Together, my daughter and I baked our first bread with it and it turned out beautifully and tasted super delicious. Now we hope it wasn't beginner's luck.
