Tamari is the dark, original Japanese soy sauce, which is brewed using only soya (therefore always gluten-free) with no added grains. Incidentally, the alcohol content is not adulterated, but is produced by fermenting the k?ji, the starter culture with the fungus Aspergillus Oryzae. All naturally brewed soya sauces contain alcohol. Whether Arche, Lima or Yakso, each of these tamari tastes slightly different.

Tamari ist die dunkle, ursprüngliche jap. Sojasauce, die ohne Getreidezusatz nur aus Soja (daher immer glutenfrei) gebraut wird. Der Alkoholgehalt wird übrigens nicht gepanscht, sondern entsteht beim Fermentieren des K?ji, der Starterkultur mit dem Pilz Aspergillus oryzae.
