Spielberger Organic Wholemeal Einkorn Flour. Like emmer or kamut, einkorn is one of the ancient grains. At the Spielberger Mill, the grain is ground in several steps to this fine wholemeal flour. For sponge mixtures and shortcrust pastry, sweet and savoury waffles, pancakes and biscuits.
Recipe: cherry pound cake with einkorn
Ingredients: 250 g of einkorn flour, 200 g butter, 1 sachet of baking powder, 200 g honey, 4 eggs, 300 g cherries, 1 pinch of salt
Preparation: Beat the butter with the honey and stir in the egg yolk and the pinch of salt. Mix in the wholegrain wholemeal flour and baking powder and add. Stir in whipped egg whites. Put the dough in a greased dish and carefully squeeze in the drained cherries. Bake the sponge cake for approx. 50-60 minutes at approx. 150°C (circulating air).
