: Description:

Spielberger Organic Wheat is grown according to Demeter standards. Wheat is classically used for baking. Cooked it is also suited as a side dish or as a basis for creative stews.
Recipe: Wholemeal wheat bread
Ingredients: 500 g wheat, 10 g salt, 10 g fresh yeast, 375 ml warm water
Preparation: Grind the wheat in a grain mill. Dissolve the yeast in warm water. Knead into a dough with the remaining ingredients in a bowl and leave covered in a warm place to rise for approx. 60 minutes. Then knead again and place in a greased, floured baking tin. Cover and leave to rise for another 45 minutes in a warm place. Brush the bread with a little water and bake in a preheated oven at 200°C on the bottom shelf for approx. 45 minutes.

I always grind the grain fresh and bake my bread and cakes with it and they turn out just as well as with conventional flour and taste at least as good, if not better. Only the colour of the pastry is a little darker than what I'm used to at the bakery. But it is much more natural. I also use the cereal for my fresh grain porridge. Another thing that absolutely has to be mentioned is the intense, spicy scent that freshly ground wholemeal cereal exudes. I would never want to miss that again.

Ich mahle das Getreide immer frisch und backe damit mein Brot und meine Kuchen und sie gelingen genau so gut wie mit herkömmlichem Mehl und schmecken mindestens genau so gut, wenn nicht besser. Lediglich die Farbe des Gebäcks ist etwas dunkler als vom Bäcker gewohnt. Dafür ist es aber viel natürlicher. Außerdem verwende ich das Getreide für meinen Frischkornbrei. Was unbedingt noch zu erwähnen ist, ist der intensive, würzige Duft, den frisch gemahlenes Vollkorn-Getreide ausströmt. Das möchte ich nie mehr missen.
