Sarchio Farro Perlato Biologico. Thanks to the ‘pearling’ process, in which the grains are stripped of their outer husk, they take on a lighter colour and can be cooked in significantly less time than hulled spelt, without the need for soaking. Its characteristic flavour makes it very versatile – it can be used in hot dishes such as soups and stews as well as in cold dishes such as salads.
Recipe for a Mediterranean spelt dish

Ingredients:
  • 250 g pearl spelt
  • 250 g cherry tomatoes
  • 3 tablespoons black olives
  • ½ onion
  • 2 tablespoons extra virgin olive oil
  • Salt to taste

Preparation:
Cook the spelt in boiling salted water and drain. In the meantime, prepare the dressing: halve the washed tomatoes and olives. Heat 1 tablespoon of oil in a pan, fry the onion and then add the tomatoes and olives. Fry for 5 minutes and season with salt. Then simmer for another 4–5 minutes.
Place the spelt in a bowl, add the prepared mixture and mix well. Season to taste with a dash of extra virgin olive oil and salt.
