Pasta d'Alba Organic Maize Capellini. The spaghetti-like pasta is the thinnest pasta shape in Italian cuisine after the lesser-known and often confused capelli d'angelo. This gluten-free variant made from organic maize is traditionally drawn in bronze moulds, which creates a rough surface. This absorbs sauces wonderfully. They are traditionally served with fresh tomato sauces, à la aglio e olio, with fish and seafood or as a soup garnish.
