Byodo Organic Balsamic Vinegar
The chefs in ancient Rome were known for their imaginative and tasty dishes. Pepper and salt were almost unaffordable but local herbs such as rosemary, sage, chives, thyme or lemon balm spoiled the palate just as effectively. Of course the Romans also knew about the effect and the taste of fermented fruits. While some especially enjoyed the intoxicating effects of fruit wine, gourmets especially loved the exquisite flavour of balsamic vinegar, a grafting variant of wine. Not only in the haute cuisine of the upper class balsamic vinegar was served in a variety of flavours, this was also possible even in peasant cots. Because the production was relatively simple: First juice was obtained from fruit and then it was stored until it began to ferment. The result a few weeks later was fruit wine. The fruit wine was filled in wide wine bottles with a little bit of vinegar, which caused a further step of fermentation that converted the alcohol into vinegar. This maturation process required a few months. The result was a full-bodied balsamic vinegar that could be used for seasoning salads, cheese and meat in many different ways. Therefore vinegar, besides salt, is one of the oldest condiments of humanity.
Nowadays there are numerous ways to produce vinegar. The basic principle for the production of hand-made balsamic vinegar however remains the same up to date. Only the hygienic conditions and the professional production have changed. Moreover the Byodo Organic Balsams are made of organic fruits. Byodo Organic Balsams are characterized by their unique fruity taste and naturalness. The delicate flavour compositions ignite the passion and inspire new culinary ideas.
Basically, Byodo Vinegar is obtained from alcohol, e.g. depending on the variety, from red wine, raspberry wine, grain alcohol, etc. For this purpose, the alcohol is filled into large fermentation vats and is slowly fermented to vinegar at pleasantly warm temperatures of about 25° C. The characteristic sweet taste of the Organic Apple Balsam is created by the special mixing ratio of apple cider vinegar and apple syrup. The Byodo Organic Raspberry Balsam convinces with a wonderfully fruity raspberry note. Combined with the pleasant taste of sweet apple syrup, this incomparably harmonious duet has many talents that go far beyond the classic salad. The Raspberry Balsam gives summer dishes such as antipasti the finishing touch and refines light dips wonderfully.
A tasteful highlight is the tart and fruity note of the Byodo Organic Pomegranate Balsam. The slightly sour yet wonderfully fruity taste of ripe pomegranate seeds is characteristic for this balsamic vinegar. It tastes particularly delicious with strong salads with apple, plum, pear and almonds. But it also goes well with goose and duck as well as with fine game dishes. The pleasantly sweet-fresh taste of the Organic Lemon Balsam is created by a special mixing ratio of apple cider vinegar and apple syrup, lemon juice concentrate and lemon oil. Its delicious citrus note goes well with fish but also with delicious spring salads and light sauces.
