Bioladen Organic Maple Syrup Grade A. Light, golden-coloured maple syrup with a delicate, mild flavour. Maple syrup is the boiled-down sap of the sugar maple. The differences between the various grades of maple syrup relate to colour, flavour and intended use. The mild, light, golden-coloured Grade A maple syrup goes well with pancakes, waffles and ice cream. The strong caramel flavour of the darker, amber-coloured, reddish Grade C maple syrup is well suited to cooking and baking, as well as for savoury marinades or rich sauces. Very dark Grade D maple syrup, due to its very strong flavour, is usually only used for savoury meat dishes, dark sauces and in recipes requiring an intense maple flavour.
In North America, Grade A to D maple syrup is now increasingly distinguished solely by the designations ‘Golden’, ‘Amber’, ‘Dark’ and ‘Very Dark’.
