Verjus is helpful for those with histamine intolerance, as it is an excellent substitute for vinegar and citrus fruit juice (which are histamine triggers). However, once the bottle has been opened, it must always be put straight back in the fridge. When the bottle is nearly empty, the contents may separate. It will then smell different and have brown streaks in the sediment. In smaller brown bottles, this happens later on.

Verjus ist hilfreich bei Histaminunverträglichkeit, da er Essig und Saft von Zitrusfrüchten (diese sind Histamintrigger) sehr gut ersetzen kann. Er muss aber nach Öffnung der Flasche immer sofort wieder in den Kühlschrank. Wenn der Inhalt der Flasche fast aufgebraucht ist, kann er umkippen. Dann riecht er anders und hat braune Schlieren im Bodensatz. In kleineren braunen Flaschen passiert das später.
