Farfalle laminate is made using the traditional pasta bianca method: The dough is kneaded, rolled out, folded and aerated. Without eggs and without pressing through a mould. The result is a pasta with a silky, fresh consistency and a light-coloured, fine dough. Unlike traditional pasta, it should be cooked thoroughly, not served al dente. It remains supple and tender and, thanks to its shape, absorbs sauces wonderfully harmoniously.
