Ingredients: 500 g wholemeal emmer flour, 350 ml water, 20 g yeast, 10 g salt
Preparation: Put all the ingredients in a bowl, knead into a soft, smooth dough and leave to rise in a warm place for approx. 45 min. Knead well again and put the dough into a greased loaf tin. Leave to rise again for 30-40 minutes. Preheat the oven to 200 °C top / bottom heat and bake the bread for approx. 50 min.

: Review date:I recently started using it instead of rye flour for a sourdough bread. However, the dough is very soft compared to rye, so it needs some skill (or an extra portion of rye), or a baking tin. The taste and crumb are great, and I personally find it easier to digest.
Verwende es seit kurzem an Stelle von Roggenmehl für ein Sauerteigbrot. Allerdings wird der Teig im Vergleich zum Roggen sehr weich, da braucht es etwas Geschick (oder einen zusätzlichen Anteil Roggen), bzw. eine Backform. Der Geschmack und die Krume sind toll, auch finde ich persönlich die Bekömmlichkeit besser.
