Ingredients for 4-6 people
For the lamb:
  • 2 cloves of garlic
  • 1/2 teaspoon Herbaria Sicilian rock salt
  • 1.5 kg leg of lamb boneless
  • 2-3 tbsp Herbaria Mapuche fire
  • 3 tbsp blossom honey
  • 6 tbsp olive oil
  • 1/4 l Cabernet Sauvignon
For the coriander oil:
  • 1 bunch of coriander
  • 50 g spinach leaves
  • 200 ml of sunflower oil.
For the coriander oil, first boil the coriander and spinach in salted water for 30 seconds, drain, rinse and squeeze well. Mix finely with sunflower oil, leave to stand in the refrigerator for 24 hours, strain through a fine sieve.
Preheat a grill with a lid (or the oven) to 130 °C. Grind the garlic and rock salt in a mortar to a paste. Mix with 2 tablespoons of olive oil and honey. Rub the leg of lamb with about 2 tablespoons of Herbaria Mapuche-Fire and fry with 3 tablespoons of olive oil in a cast-iron pan on the stove. After about 10 minutes, brush the meat with the honey mixture and cook in the pan, on the grill or in the oven. After an hour, deglaze the roast with red wine. Then baste the meat juices from time to time until the meat is cooked after about 3 hours. Cut the leg of lamb into slices, serve with red wine sauce, empanadas and coriander oil.

My favourite spice blend! For all red vegetable stews from chilli to piperade to goulash and djuvec. The subtle spiciness, the smoky chilli note - simply wonderful. And success is guaranteed.

Herbaria makes wonderfully rounded spice blends. This one is perfect for chilli and bean dishes. It imparts a slightly spicy, pleasantly smoky aroma.
The spice is only added at the end of the cooking time. The higher price of these spices is justified in my view, as the quality is really top.
