BioVegan Organic Gelling Sugar 3:1. The bag content is sufficient for 1 kg of fruits or 1.2 litres of juice. The gelling sugar can be used for the preparation of fruit spreads or gelees. Vegan and gluten free.

Application:

Just add: 1.5 kg of finely chopped, pitted fruits or 1.2 l of juice
5 g of citric acid (or juice of a lemon)

Preparation with fruits:
1. Place small plate for gelling sample in the freezer.
2. Wash fruits, drain, cut small.
3. Pour bag contents, fruits, citric acid or juice into the pot.
4. Mix everything and let it boil while stirring for 4 minutes.
5. Gelling sample: After cooking, place one tablespoon of the hot fruit preparation on a chilled plate, allow to cool. If the amount is not firm enough, cook a little longer. Repeat gelling test. 6. Pour the hot filled fruit into brisk glasses, close tightly and place on the lid for 5 minutes.

Preparation of jelly from juice:
Put 1.2 l of juice in a pot and heat up. Then add 500 g BioVegan Gelling Sugar 3:1 whilst stirring. Go through the steps 1,4 to 6.

Note:
Due to the low sugar content in the fruit spread 3:1, there is little preservation. In order to achieve a longer shelf life, BioVegan recommends using preservative. If you want to avoid adding the preservative, you must work very cleanly during the preparation. This means sterilising the work utensils, boiling the jars and lids is absolutely necessary. The fruits to be used must be thoroughly cleaned and should be flawless. After opening, store the jars in the refrigerator and consume them quickly.

Useful tips:
1. A firmer fruit spread is achieved by extending the cooking time.
2. Prepare no more than 1 kg of fruit with 1 pack of Biovegan Gelling Sugar 2:1 per cooking process!
3. Choose the pot size so that the fruits only fill the pot halfway.

Fruit pectin content:
- Fruit with low pectin content (addition of 1 grated apple recommended): Mango, peach, cherry, strawberry, elderberry.
- Fruit with medium pectin content (addition of 1/2 grated apple recommended): blackberry, raspberry, blueberry, kiwi, apricot, plum.
- Fruits with a high pectin content: quince, apple, orange, cranberry, currant.
