Bauck Wunderbrød with Nuts Organic Baking Mixture. Wunderbrød made from rolled oats, seeds and nuts. The preparation is very simple, the mixture is only mixed with water, must soak briefly and can then be baked straight away. To activate the seeds, the dough can be left to soak overnight in the fridge. No baking machine is required. A simple loaf tin is sufficient. But the bread can also be made without a tin, simply form a loaf and place on a baking tray in the oven. The contents of the pack make approx. 950 g of bread.
Preparation
  1. Put the bag contents into a bowl and pour over 500 ml of cold water.
  2. Mix the dough thoroughly and let it soak in the refrigerator for 3 hours or overnight.
  3. Place the firm dough in a well-greased box shape (25 x 10 cm).
  4. Spread with a wet dough scraper.
  5. Place the bread in the cold oven and bake without pre-heating at 200 °C top and bottom heat for about 80 minutes.
  6. Remove from the box immediately and cool before cutting.

The whole family loves this bread (which is not really bread). The nuts are the icing on the cake, juicy, keeps fresh quite well. Tastes great with just butter. I bake several in parallel and freeze some sliced.

The baking is really very easy, you don't even need a food processor. Just pour water over it - stir - and let it swell. I covered the loaf tin with baking paper and took the bread out of the tin after baking for 80 minutes, put it on a baking tray and browned it on both sides with convection so that it had a crust. It turned out well. Although the bread was in the oven for a very long time, it is relatively moist inside and tastes of soaked grains and unfortunately not much else. I had soaked the dough overnight and would try again to see how the bread tastes if you only soak the dough for 3 hours. Also, I would use bread seasoning next time because it already tastes bland.

Das Backen ist wirklich sehr einfach, man braucht noch nicht mal eine Küchenmaschine. Wasser drüber - durchrühren - quellen lassen. Ich habe die Kastenform mit Backpapier ausgelegt und das Brot nach den 80 Minuten Backen aus der Form genommen, auf ein Backblech gelegt, und es von beiden Seiten mit Umluft gebräunt, damit es eine Kruste bekommt. Ist auch gut gelungen. Obwohl das Brot sehr lange im Ofen war, ist es innen relativ feucht und schmeckt nach eingeweichten Körnern und leider sonst nach nicht viel. Ich hatte den Teig über Nacht eingeweicht und würde nochmal ausprobieren, wie das Brot schmeckt, wenn man den Teig nur 3 Stunden einweicht. Außerdem würde ich beim nächsten Mal Brotgewürz verwenden, denn es schmeckt schon fad.

It's a really moist bread and the nuts make it really different. I like to eat my Wunderbrød with soft cheese or spreads. For topping, however, I prefer to use classic rye bread.

Wirklich ein schön saftiges Brot und durch die Nüsse auch echt mal anderes. Mein Wunderbrød ess ich am liebsten mit Weichkäse oder Aufstrichen. Zum Belegen nehm ich aber lieber klassisches Roggenbrot.
