Just Taste Organic Mungo Edamame Fettucine. These fine fettuccine combine the power of edamame and mung beans. They are particularly suitable for sauce dishes, as their wider surface allows them to absorb the sauce even better. The green colour is retained during cooking, making these noodles a real eye-catcher!

Recipe: Mungo edamame fettuccine with aubergines & tomatoes:

Ingredients:

250 g mungo edamame fettuccine
500 g organic tomatoes
500 g organic aubergines
4 tbsp organic olive oil
1 tsp chilli flakes
4 cloves of garlic, crushed
1 tbsp balsamic vinegar
1 tbsp honey
SPS (salt, pepper, sugar)

Preparation:

Cut the aubergines and tomatoes into small cubes.
Heat a pan with 4 tbsp olive oil, add the diced aubergines and tomatoes and cook for 10-15 minutes until soft, stirring occasionally.
Mix the balsamic vinegar and honey with the vegetables and season with SPS. Then add the garlic and chilli flakes and simmer on a low heat for a few minutes until the vegetables are completely soft.
Cook the pasta in salted water for 5 minutes until al dente.
Mix the pasta with the sauce and serve on plates.
