A table becomes a banquet table only with high quality crockery. This applies to the hotel as well as to the celebration at home. And with several courses one needs besides a good number of plates and glasses also the matching cutlery. To arrange everything in the correct order and the proper distance is an art in itself. In the Middle Ages one was not very well equipped yet. Even princes usually could count their tableware on one hand: knife, skewer, a jug and instead of a plate there was a wooden board. And this board was often even shared with table-mates. The common people had to make do with even less "dishes". At farmers and craftsmen mostly just the pot or bowl was put in the middle of the table. Wooden spoons were then immersed in turn. Those who had no spoon dipped bread in the bowl. Plates, as we know them today, appeared in Europe not until the days of the Renaissance. Cups came up even later.
In the late 16th century new hot drinks were fashionable in Europe. Hot chocolate broke the first ground. Later also coffee and tea was served in the salons of Paris, London or Weimar. The trendy drinks from the colonies made the purchase of new drinking vessels necessary. Because they were just too hot for the old cups made of tin, clay or horn. Therefore, many nobles began to import porcelain cups from China. In the Middle Kingdom, the finely crafted papboats were an integral part of tea culture. Although they were quite nice to look at, they did not have a handle. In China that was no problem, because almost exclusively green tea was drunk, which is prepared with hot water (piping hot water would release the bitter substances of the green tea). Thus there was no danger of burning one’s fingers at hot tea cups in the Middle Kingdom. But when coffee or black tea was infused one had to be carefully. To shorten the waiting time until the first sip, one soon began to provide the small bowls with a handle: The coffee cup was born. 1710 August II the Strong founded the Porcelain Manufactory Meissen. From now on the royal houses and parlor operators were able to stock up with dishes that matched a certain status. Finally it was possible, to drink from beautiful mugs with handles. Still, it was not uncommon in the 18th century to drink the coffee from the saucer. If the coffee was too hot, one just poured it from the cup in the saucer for cooling. How common this custom was can be seen at the etchings of the French painter Louis-Marin Bonnet. He portrayed ladies who drink from the saucer with relish - stylishly with splayed out finger.
Then and now, it doesn’t matter if one has a well laid banquet table or a coffee party, after the meal the dishes must be washed again.
