Arche Organic Shiro Miso, 300 g: Unit: 300 g

1 piece of Arche Wakame (approx. 7cm)

1 cup finely chopped onions

1 litre of water

3 tbsp Arche Organic Genmai Miso

2 tbsp Arche Organic Shiro Miso

Vegetable garnish (e.g. leek, carrots, broccoli, some chopped onion greens or cress)

Rinse the wakame well under cold water for 5 minutes (or soak briefly), remove the leaf-vein and cut into 1 cm pieces. Wash, clean and chop the vegetables. Place in a saucepan with the onions and water, bring to the boil and cook over a moderate heat for 10 to 20 minutes. Mix the miso with 1 cup of the stock and add to the soup. Add the wakame to the soup. Remove the soup from the heat and let it stand, covered, for another 10 minutes. Garnish and serve.
