Lecker's Organic Cake Glaze Red. For glazing fruit cakes and tarts with an attractive red colour. The recipe is based on icing sugar and agar-agar as a plant-based gelling agent. Beetroot powder naturally provides the beautiful red colour.

Toepassing:

For 1/4 l of liquid (water and/or fruit juice).

Mix the contents thoroughly with cold liquid and leave to soak briefly. Then boil for approx. 2 mins, stirring constantly. Remove the saucepan from the hob and leave to cool for approx. 15 mins. Agar-agar only sets as it cools (from 40 °C). Once it has cooled completely (approx. 60 mins), the agar-agar will have set completely. Using a spoon, spread the cake glaze evenly over the cake, starting from the centre. Tip: To prevent the cake base from becoming soggy, simply sprinkle it with a little cream stiffener beforehand.

Note: Acidic fruit juices can impair the gelling ability.
