Südzucker Organic Beet Sugar for Gelling. Sugar beets are little all-rounders. They can be processed in many different ways and are a good basis for the production of beet sugar. The sugar beets for this beet sugar are grown by organic farmers in fields in southern Germany.
Preparation
Basic recipe for jam and jelly
  1. Prepare the fruit/fruit juice: Weigh 1 kg of fruit, wash, peel, remove stalks and stones, and purée. Alternatively, use fruit juice: prepare 750 ml of cold, unsweetened fruit juice.
  2. Mix the fruits: mix the fruit or juice with the contents of a 1 kg packet of beetroot gelling sugar 1:1.
  3. Cooking: bring the mixture to the boil in a large saucepan, stirring continuously. Continue cooking for 4 minutes, stirring continuously. Test for gelling*. Immediately fill prepared jars to the brim and seal. 
1 packet is always sufficient for one cooking process.
Tip: For very sweet fruits, add the juice of 1 to 2 lemons.

* Gelling test: Shortly before the end of the cooking time, lift the stirring spoon and allow the hot mixture to drip off. When the last drop becomes firm, pour the mixture into the jars. Do not exceed a maximum cooking time of 8 minutes. Only use clean jars, lids and fruit. Store the product in a cool, dark place. Once opened, store in the refrigerator. Use the contents of opened jars quickly.
