The slightly sour and fruity flavour of red sumac is mainly used in oriental and Asian cuisine. It goes very well with fish, grilled meat, stews and vegetables that require a slightly acidic flavour. Sumac (sumac) has a more delicate acidity than vinegar or lemon.
