Bauck Baker's Bread Seed Crust. For this bread baking mix, an old baker's trick is used and breadcrumbs are used in the recipe. This makes the bread particularly juicy. Together with the delicious taste of fine seeds, the result is a deliciously nutty aroma.
Preparation 
For a loaf of bread, short dough 
  1. Mix the mixture (450 g) with 1 pack of dry yeast, add 310 ml lukewarm water and knead until a smooth dough is formed. 
  2. Let the dough rise covered in a bowl for 45 minutes. 
  3. Form the dough into a round loaf on a floured work surface and place on a baking tray lined with baking paper. Brush the bread with water, sprinkle with sesame seeds and let it rise covered for another 45 minutes. 
  4. Meanwhile, preheat the oven to 230°C top/bottom heat. 
  5. Cut the bread with a sharp knife and bake on the middle rack for 10 minutes. Reduce temperature to 210°C and bake for another 40 minutes. Allow bread to cool thoroughly.;

Preparation 
For a loaf of bread, long dough 
  1. Mix the bread mixture (450 g) with 1/2 pack of dry yeast, add 310 ml lukewarm water and knead until a smooth dough is formed. 
  2. Let the dough rise overnight (min. 6 hours) in a covered bowl in the refrigerator. 
  3. Remove the bowl of dough from the refrigerator and allow at least 1 hour to reach room temperature. 
  4. Form the dough into a round loaf on a floured work surface and place on a baking tray lined with baking paper. Brush bread with water, sprinkle with sesame seeds and let rise covered for 45 minutes. 
  5. Meanwhile, preheat the oven to 230°C top/bottom heat. 
  6. Cut the bread with a sharp knife and bake on the middle shelf for 10 minutes, then reduce the temperature to 210°C and bake for another 40 minutes. Let the bread cool on a wire rack.
