Puree from fermented apricots

Arche Organic Umeboshi Paste. The puree of lactic fermented umeboshi apricots with its fruity-sour and at the same time salty flavour is a sophisticated condiment for salad dressings, dips, sushi rolls, tofu and vegetable dishes.
Recipe tip: ruccola salad with ume dressing and orange
For the salad:
250 g ruccola
100 g mushrooms (such as white mushrooms, shiitake)

For the dressing:
3 tbsp Arche Organic Black Sesame Seeds
2 tsp Arche Organic Umeboshi Paste
2 tbsp sesame oil
1 tbsp lemon juice
juice of 1-2 oranges
1 tsp spring onion or chives, chopped

Wash and clean the rocket and mushrooms. For the dressing, toast the sesame seeds in a dry frying pan over a medium heat for 1-2 minutes. When the seeds begin to smell fragrant, remove the pan from the heat immediately. Finely chop the spring onions or chives. Blend the remaining ingredients until a smooth paste is formed. Stir in the spring onion or chives and refrigerate for 30 minutes.

Tip: The salad is particularly delicious if you fry the mushrooms just before serving and serve them still slightly warm with the rocket salad.
