Alce Nero Organic Balsamic Vinegar of Modena P.G.I. 5 Sigilli. This balsamic vinegar, made from reduced grape must and matured wine vinegar, is wonderfully dense, with a soft, rounded flavour that elegantly balances fruitiness and acidity. A few drops over strawberries, mature cheese or in a marinade, and the delicately fruity acidity ensures moments of pure enjoyment.
The Consortium Profile is a classification system developed by the Consorzio Tutela Aceto Balsamico di Modena. The rating is often based on a five-point scale. It helps consumers find the right balsamic vinegar to suit their taste and intended use. The scale ranges from one seal (young/tart) to a maximum of five seals (long-aged/sweet). This 5-seal balsamic vinegar has a full body (corpo pieno) and is sweeter, rounder and smoother (dolce) in profile.
