: Review date:Since a pastry chef friend of mine explained the difference between the various types of flour to me last year, I now have a much better idea of the corresponding properties or areas of application of the different numbers. For baking, I therefore only use fine soft flour with good baking properties. This is the case, for example, with types 405 and 550. Especially now, before Christmas, I use a lot of fine flour with my two small children to bake all kinds of biscuits. But I also always succeed very well with this type of flour for cakes, pies or waffles. Since it is also really cheap for an organic flour, it gets five stars from me.
Seitdem mir ein befreundeter Konditor letztes Jahr einmal den Unterschied zwischen den verschiedenen Mehltypen erklärt hat, kann ich mir die entsprechenden Eigenschaften bzw. Anwendungsgebiete der unterschiedlichen Zahlen nun viel besser vorstellen. Zum Backen verwende ich daher nur noch feines weiches Mehl mit guten Backeigenschaften. Das ist z.B. bei den Typen 405 und 550 der Fall. Besonders jetzt vor Weihnachten verbrauche ich mit meinen zwei kleinen Kindern jede Menge feines Mehl, um allerlei Plätzchen zu backen. Aber auch Torten, Kuchen oder Waffeln gelingen mir immer sehr gut mit diesem Typ. Da es für ein Biomehl auch noch echt günstig ist, bekommt es von mir fünf Sterne.
