BioVegan Organic Baking Mix Lemon Cake. Lemon sweet slices or fluffy lemon muffins. Juicy and fruity with extra lemon flavour. Vegan and gluten free. Ready in the "twinkling of an eye". Let yourself be gently seduced.
Pack contains: 400 g cake mix, 50 g lemon icing mix.
Just add: 300 ml soy drink, 100 g soft margarine, 1 tbsp (15 ml) water or lemon juice for the icing.
You will need a rectangular baking tin, 20-25 cm long.
  1. Preheat the oven to 180°C for circulating air or top/bottom heat and grease the baking tin well.
  2. Put the baking mix with the soy drink and margarine in a mixing bowl and mix with a eggbeater on low speed. Then beat at the highest level until a smooth dough is formed. Pour the batter into the loaf pan and smooth it out a bit.
  3. Bake the lemon cake on the lower shelf for approx. 50 minutes at 180°C circulating air or approx. 60 minutes at 180°C top/bottom heat. At the end of the baking time, take a test from the middle of the cake using a wooden skewer. If the dough sticks to the stick, extend the baking time by approx. 5 minutes if necessary and try it again.
  4. Let the cake rest in the tin on a wire rack for 15 minutes and carefully turn out of the tin. Then mix the mixture for the lemon icing with 1 tablespoon of water or lemon juice and spread on the still warm cake. Finally, let the cake cool completely on the wire shelf.
