Yeast-free bread baking

BioVegan Organic Baking Ferment. This baking ferment is produced without honey or yeast and has a mild, balanced flavour. Ideal for anyone who is sensitive to yeast and still wants to bake good bread!
For 1 loaf you need:
  • 550 g wholemeal wheat/spelt flour (no rye!) + some for dusting
  • 1 tsp salt
  • 500 ml lukewarm water
  • Some fat for the baking tin
Preparation:
  1. Gradually trickle the bag contents into 350 ml water while stirring. Stir in 300 g of the flour with a wooden spoon. Dust the dough with flour. Wrap the bowl in towels and leave to rise in a warm place (30-35 °C) for 12 hours.
  2. Stir in 150 ml water. Stir in 150 g flour and dust. Leave to rise again in a warm place (30-35 °C) for 5-8 hours, the dough should rise by half.
  3. Knead with 100 g flour and 1 tsp salt. Place in a greased, floured baking tin wrapped in towels and leave to rise for 2 hours in a warm place (30-35 °C). Preheat the oven to top/bottom heat and bake at 180 °C for 60 minutes. Turn out and leave to cool on a wire rack.
