The result of this extremely slow fermentation is a resinous, sticky mass. During the hot summer months, the soft resin oozes from crevices in the rock and is harvested by hand with great effort. It holds deep cultural significance, and its name, which derives from Sanskrit, translates as ‘conqueror of the mountains’.
