Spielberger Organic Potato Bread Flour. A flour blend with potato fibres for moist breads with an aromatic crumb. Just right for Swabian potato bread. The Potato Bread Flour combines wheat Type 812 with valuable potato fibres for a moist, light crumb. The fibres improve water absorption and ensure long-lasting freshness. Whether classic for Swabian potato bread or creative in your own creations, the flour delivers aromatic flavour and good baking properties.
Basic recipe: Swabian potato bread
Ingredients: 25 cm loaf tin, 500 g flour mix, 20 g fresh yeast, 10 g salt, 450 - 540 ml lukewarm water
- Dissolve the yeast in 450 ml lukewarm water. Mix the flour mixture and salt in a bowl, add the warm yeast water and knead into a soft dough. If necessary, add a little more warm water.
- Leave the dough to rise at room temperature for 2 hours.
- Grease a loaf tin well and dust with flour. Work the dough a few times with a dough scraper and place in the tin. Cover again with a cloth and leave to rise for 1 hour.
- Preheat the oven to 225 °C, place the bread on the second lowest shelf and bake for 45-55 minutes.
- Remove the finished bread from the oven, turn it out of the tin and test for doneness. If tapping the underside of the bread makes a hollow sound, it is baked through and can cool under a cloth on a rack.
