With a ganache of smoked carp caviar and red rowanberry jelly

Zotter Organic Chocolate Carp Caviar & Jelly Berries. 50% milk chocolate filled with a carp caviar ganache, refined with berry jelly and almond praline with caramelised poppy seeds. Hofbauer’s smoked carp caviar doesn’t pop like traditional caviar, but is rich in umami and salty notes, combined with white chocolate. It is served with a fruity red jelly made from strawberries, blackberries, blueberries and raspberries, and a layer of almond praline with caramelised Waldviertel blue poppy seeds.

The shelf life of Zotter chocolates is specified as just a few months from the time of manufacture. As Zotter does not use stabilisers or preservatives, the chocolates have a natural shelf life. Natural fats such as cocoa butter, nuts or alcohol act as natural preservatives. The shorter best-before date is therefore a sign of high-quality Zotter chocolate.
