Dennree Organic Spelt Semolina. Organic spelt semolina offers pure enjoyment. Organic spelt is ground to a fine grain for the production of dennree spelt semolina. It can be prepared in just a few minutes and is ideal for creamy semolina porridge and for preparing casseroles and pasta.

Basic preparation semolina porridge
Bring 1 litre of milk or vegetable drink to the boil. Then add 100 g spelt semolina and bring to the boil again briefly while stirring. Remove the pan from the heat, cover and leave the semolina porridge to swell for 5 minutes.
- 200 ml whipping cream
- 1 pinch of salt, pepper
- 300 g spelt semolina
- 70 g spinach (fresh or frozen)
- approx. 5 tbsp basil pesto
- 2 egg yolks
- 1 egg
For the vegetables:
- 3 spring onions
- 1 clove of garlic
- olive oil
- 200 g spinach (fresh or frozen)
- 1 tbsp thyme
- 1 tbsp rosemary
- 1 pinch of salt
- 1 tbsp crème fraîche
- 50 g feta cheese
Decoration:
- grated parmesan.
Preparation
- Bring the milk, whipping cream, salt and pepper to the boil in a pan, then remove from the heat. Sprinkle in the semolina, stir in and simmer on the hob for approx. 1 minute.
- Cut the spinach leaves into small pieces and place in a bowl with the semolina mixture, pesto, egg and egg yolk and stir in. Chill for 15 minutes.
- Form approx. 24 small dumplings and place in lightly salted boiling water. Leave the dumplings to simmer uncovered for approx. 15 minutes.
- Wash and chop the leek and sauté with the garlic and oil, then add the spinach. Season with thyme, rosemary and salt and steam until soft. Add the crème fraîche and feta. Remove the dumplings from the water and roll in Parmesan. Serve the dumplings and vegetables together.
